There are many yeast for making wine.  Yeast don't just turn sugar to alcohol, they also add other characteristics to your finished wine and can affect the flavour, feel and aroma of the finished wine.

Depending on the style of wine you are making, choosing the best yeast for making wine will mean your wine will have the flavours you want.

Using a process call biotransformation, yeast east sugars, flavour esters and other compounds in your grape juice and, as they digest them, they turn them into new compounds causing your wine to taste very different to the original grape juice.

Yeast can add flavours to your finished wine.  Choosing the right wine yeast for the style of wine you are making is important as the yeast add flavours.  Using a yeast for red wine can add a spicy punch, and earthiness and even add to the jammy fruity flavours, perhaps not something you want in a chardonnay.  Where as a yeast for white wine may add an acidity and a tropical fruit flavour to the finished wine.

Yeast can also affect the mout feel of a finished wine, with different yeast strains affecting the dryness, the acidity and body of a wine.
